Beef Short Ribs originate from the first 5 Ribs inside the shoulder blade of the chuck primal. 

Cooking Tips

Short Ribs require slow cooking in crock pot or smoked.  This cut has a decent amount of fat which greatly adds to its delicious flavor.  They are great when seasoned with red wine, rosemary, garlic, balsamic, and of course classic BBQ.  Begin with a pan sear and follow by br braising or wrap them up for grilling or baking.  They are also delicious in the Instapot if time is an issue.  Sauté first then pressure cook for fall off the bone tenderness.
