This steak is cut from the Plate, which is a trimmed boneless portion of the diapragm muscle. It is long, flat, and valued for its flavor more than tenderness. 

Cooking Tips

Skirt Steak is usually the cut of choice for making Fajitas, ranchera, Chinese stir fry, and in Cornish pastries. To minimize toughness and add flavor, skirt steaks are usually marinated before grilling, or pan seared very quickly, or cooked very slowly, typically braised. It is also sliced against the grain to maximize tenderness.
